3 deliciosos y fáciles platos vegetarianos


Tanto si te preocupa tu salud como el bienestar de los animales o el medio ambiente, introducir más platos vegetarianos en tu dieta o, al menos, considerar la posibilidad de reducir el consumo de productos animales tiene muchas ventajas.

La ciencia nos ha demostrado una y otra vez que cuanta más carne comemos, mayor es el riesgo de padecer diabetes, enfermedades cardíacas y accidentes cerebrovasculares. Por el contrario, cuanta más fruta y verdura comemos, menor es el riesgo de padecer estas enfermedades y menor es nuestro índice de masa corporal. El consumo de productos animales expone al ser humano a las grasas saturadas, el colesterol, la lactosa y los microorganismos patógenos. En el proceso, el consumo de productos animales aumenta el riesgo de enfermedades cardiovasculares, cáncer, diabetes, obesidad y otros trastornos.

Ten en cuenta que si evitas la carne, pero sólo comes panes y pastas procesadas, exceso de azúcar y muy pocas verduras y frutas, es poco probable que obtengas los beneficios de una dieta vegetariana. Uno puede ser 100% vegetariano pero seguir teniendo una dieta poco saludable y sufrir de obesidad. Un enfoque mejor es una dieta basada en plantas. Esto significa consumir sobre todo frutas y verduras, como alubias, legumbres, frutos secos, semillas y cereales integrales.

¿Por qué hacerse vegetariano?

No hace falta que te pongas a ello de golpe. En lugar de eso, prueba a hacer comidas sin carne. Considera la posibilidad de dejar de comer carne un día a la semana. Si no te gusta la idea de pasar un día entero sin carne, empieza con un par de cenas sin carne cada semana. Algunos beneficios clave de llevar una dieta basada en plantas:

  1. Es bueno para el corazón
  2. Reduce el riesgo de cáncer
  3. Reduce la presión arterial
  4. Previene la diabetes tipo 2
  5. Promueve la salud de los huesos

Las proteínas no tienen por qué ser carne. De hecho, muchos alimentos vegetales son excelentes fuentes de proteínas. Si ha vivido toda su vida a base de carne, puede parecer desalentador saber qué utilizar en lugar de carne picada, queso y caldo de pollo. Aquí tienes algunos cambios fáciles:

– Carne, aves o pescado – tofu, tempeh, lentejas, setas

– Queso – soja, anacardo, levadura nutricional

– Caldo de carne/pollo – caldo de verduras/caldo

– Leche – leche de soja, leche de almendras, leche de coco, leche de cáñamo, leche de arroz

Platos vegetarianos fáciles para este invierno

Para empezar, aquí están nuestros platos vegetarianos favoritos de todos los tiempos. Si alguna vez nos has visitado en Shanti-Som, sabrás que, a pesar de ser un retiro de bienestar, el menú de nuestro restaurante está lleno de sabores fuertes y comidas sustanciosas. No creemos que «sano» signifique soso y tratamos de introducir este concepto a través de nuestra comida. Se utiliza poca sal, y en su lugar abundan las hierbas con toques de limón y lima.

También entendemos que la vida es ajetreada, por lo que estas 3 recetas son fáciles y rápidas de preparar, con ingredientes básicos que puedes encontrar fácilmente en tu supermercado local.

CALABAZA Y GARBANZOS AL CURRY

Este delicioso curry de calabaza y garbanzos es una cena fácil y barata de preparar, repleta de fibra y proteínas. Las especias son suaves, añadiendo sabor sin calor, por lo que es un curry perfecto para toda la familia.

tiempo de preparación: 10 MINUTOS

tiempo de cocción: 25 MINUTOS

tiempo total: 35 MINUTOS

rendimiento: 6

Ingredientes

  • 1 cucharada de aceite de oliva
  • 1 cebolla, cortada en dados finos
  • 2 dientes de ajo machacados
  • 2 cucharaditas de comino molido
  • 2 cucharaditas de cilantro molido
  • 1/4 cucharadita de cardamomo
  • 2 tazas de calabaza, cortada en dados
  • 1 taza de caldo de verduras (extra si es necesario)
  • 1 cucharada de pasta de tomate
  • 1 lata de 400 g de garbanzos escurridos y enjuagados
  • 1 lata de 400 g de tomates picados
  • 1/3 de taza de lentejas rojas, enjuagadas
  • unos puñados de espinacas tiernas frescas
  • 3 tazas de arroz integral cocido
  • 2 cucharadas de yogur natural (opcional) y cilantro fresco para server

Instrucciones

  1. En una sartén, saltear la cebolla en aceite de oliva a fuego medio hasta que esté blanda.
  2. Añadir el ajo y las especias y sofreír unos segundos más hasta que estén fragantes.
  3. Añadir el caldo, la pasta de tomate, los garbanzos, la calabaza, las lentejas y los tomates. Llevar a ebullición y luego cocinar a fuego lento tapado durante 15 minutos hasta que las lentejas y la calabaza estén blandas.
  4. Comprobar a mitad de la cocción y añadir más caldo si es necesario para que las lentejas se cuezan y no se seque y se enganche.
  5. Cocer a fuego lento los últimos 5 minutos si es necesario para que la salsa reduzca y espese.
  6. Servir con arroz integral y cubrir con yogur y cilantro picado.

BRÓCOLI ASADO QUINOA GARBANZOS

Esta saludable receta de bol de brócoli con quinoa está hecha con verduras asadas y aderezada con jarabe de arce ligeramente endulzado, lo que la hace completamente libre de gluten y apta para vegetarianos.

tiempo de preparación: 10 MINUTOS

tiempo de cocción:  30 MINUTOS

tiempo total: 40 MINUTOS

rendimiento: 2-4

Ingredientes

Para el bol:

  • 1 taza de garbanzos en lata, escurridos, bien enjuagados y secados con palmaditas
  • 1mano pequeño de brócoli, cortado en mini floretes (unas 3 tazas)
  • 1 cucharada de aceite
  • Sal y pimienta
  • 3/4 de taza de quinoa cocida
  • 1 1/2 taza de agua o caldo
  • 1/2 taza de perejil fresco picado

Para el aderezo:

  • 5 cucharadas de aceite de oliva virgen extra
  • 1-2 cucharadas de jarabe de arce puro
  • 1 cucharada de vinagre de sidra de manzana
  • 1 cucharadita de mostaza de Dijon
  • Una pizca de sal
  • 1/8 de cucharadita de eneldo seco (opcional)
  • Adorne con perejil adicional, cebollas verdes en rodajas, arándanos secos o semillas de calabaza crudas

Instrucciones

Para el bol:

  1. Precalentar el horno a 400 grados Fahrenheit / 200 grados Celsius y forrar una bandeja para hornear con papel pergamino o un tapete para hornear.
  2. Poner los garbanzos y el brócoli en la bandeja de horno preparada y rociar con 1 cucharada de aceite y espolvorear con una pizca de sal y pimienta.
  3. Asar en el horno durante 25-30 minutos, o hasta que los garbanzos estén crujientes y el brócoli esté dorado y tierno, asegurándose de remover la mezcla de brócoli a mitad de camino.
  4. Mientras las verduras se asan, preparar la quinoa. Añadir la quinoa a una olla mediana a fuego alto con 1 1/2 tazas de agua o caldo. Llevar a ebullición, luego reducir el fuego a bajo, tapar y dejar que la quinoa se cocine hasta que se absorba toda el agua, unos 12 minutos.
  5. 5. Retirar del fuego y dejar que la quinoa se enfríe ligeramente.

Para el aderezo:

  1. En un tazón grande, bata el aceite, el jarabe de arce, el vinagre, la mostaza, la sal y el eneldo (si lo usa) hasta que esté suave y consistente.

Montar el bol:

  1. Mezclar la quinoa ligeramente enfriada con el aderezo en el bol grande. Añadir aproximadamente 1/3 de la mezcla de brócoli y garbanzos asados junto con el perejil picado y mezclar hasta que esté bien combinado.
  2. Para servir, repartir la quinoa en unas 4 porciones (o 2 porciones muy grandes) y cubrir cada porción con el resto del brócoli asado y los garbanzos. Adornar con cebolla verde en rodajas, más perejil, arándanos secos o semillas de calabaza crudas.

BATATAS Y COLES DE BRUSELAS ASADAS AL HORNO

Las verduras asadas son superiores en casi todos los sentidos, es un hecho. Son perfectas como plato principal o como guarnición. Prepáralas con antelación y recaliéntalas.  Ahorra tiempo y estrés.

tiempo de cocción: 40 MINUTOS

tiempo total: 55 MINUTOS

Ingredientes

  • 1 libra de coles de Bruselas, recortadas
  • 1 batata grande, 1 libra
  • 2 dientes de ajo machacados
  • 1/3 de taza de aceite de oliva
  • 1 cucharadita de comino
  • 1/4 cucharadita de sal de ajo
  • 1cucharadita de sal
  • pimienta, al gusto
  • 1 cucharada de vinagre de vino tinto
  • tomillo fresco, para decorar

Instrucciones

  1. Precaliente su horno a 400 grados Fahrenheit / 200 grados Celsius.
  2. Recorte sus bruselas cortando el extremo marrón pequeño. Si hay hojas amarillas, quítelas. Corta las grandes por la mitad. Añádelas a un bol grande.
  3. 3. Pele el boniato y córtelo en trozos de 1 a 2 pulgadas. Añádelo al bol grande.
  4. Aplasta 2 dientes de ajo y añádelos al bol.
  5. Vierte 1/3 de taza de aceite de oliva sobre las verduras.
  6. Añadir comino, sal de ajo, sal y pimienta al gusto. Remover para cubrir.
  7. Forre una sartén grande con papel de aluminio si quiere una limpieza súper fácil
  8. Rocíe un poco de aceite de oliva en la sartén y frótela por toda la sartén (o el papel de aluminio) con la mano. O puedes rociarlo muy bien con spray antiadherente.
  9. Vierte las verduras en la sartén.
  10. Asar a 400F/200 grados durante unos 40-45 minutos. Las verduras están hechas cuando están doradas y un tenedor se desliza en ellas fácilmente.
  11. Colocar las verduras en un recipiente para servir y mezclar con 1-2 cucharadas de vinagre de vino tinto al gusto. Adorna con tomillo fresco si quieres. ¡Coma caliente!

It instantly gives a positive emotion and desired connection. The problem with saying 'yes' all the time is we keep adding to our 'mental load', and soon there is a wall between what we actually need to thrive and be happy. 
Saying 'no' is a handy, magic word which can protect you and your boundaries. This can be a really difficult word to say. You might need to practice it slowly. After all, the guilt of saying 'no' could cause you a lot of anxiety. 
How about starting with a stranger, or someone you seldom meet. Step by step drop the 'no' word in with close friends, colleagues, your boss, and finally the toughest ones - your family members. Explain why, and offer alternative solutions. Slowly the scales will tip, and we hope you find yourself saying 'yes' to YOU more than anyone else!
